Mezcal Masterclass: Durango

Oaxaca is the jumping-off point for most people when it comes to mezcal. More mezcal is produced in Oaxaca than anywhere else in Mexico, and it represents the vast majority of what we're able to see here in the United States. Increasingly, mezcal from other regions is making its way stateside, providing a window into the diversity of traditions surrounding the category. This class we'll focus specifically on the state of Durango, exploring some of exciting spirits emanating from this world-class region, and talking about the shape of things to come.

Mezcal 201: Regions and Traditions

Oaxaca is the most established and most well known mezcal producing region in all of Mexico, but it's far from the only place where mezcal is made. Agave spirits production streches all across Mexico, and each set of traditions results in uniquely different beverages, each reflective of its people and place. Some of these products can be certified as mezcal, while others are prevented by their geography from using that protected term. All of these traditions intertwine to paint a perfect picture of Mexico as a whole: showing how diverse landscapes and distinctly unique cultures come together.

Mezcal Masterclass Series - Distillation

Distillation is the cornerstone of all the spirits we know and love. The majority of mezcal's flavor comes from the agave and its fermentation, but the still is where the palenquero carefuly edits the flavors that will end up in the glass.

Producers all over Mexico have created home-spun equipment and unique techniques which squeeze out every bit of efficency from the distillation process. While the still setups may look extremely rustic, don't let their apperances fool you. They employ ingenous technology not seen anywhere else in the world, and often make european still technology look clunky and inefficent. Beyond just clay and copper, join us as we gain a greater understanding of distillation at large, and we look under the hood of what makes the distillation of mezcal truly unique.

For lovers of agave spirits, sotol is a relatively new frontier. Never mind that it's been continuously made for hundreds of years. The spirit of northern Mexico sits at the intersection of people, place, and culture. Join us as we dig deep, exploring the rationality and terroir of spirits made from the desert spoon. Hot on his heels from a trip spanning the state of Chihuahua, Jay will be sharing the information, photos, and spirits gathered on his journey.

Mezcal can be super overwhelming. Dozens of different names and varieties make keeping track of what to expect a real challenge. Our last class focused on agaves that can be placed into groups, and this session focuses on agave types that stand alone.

Some agave species have a lot less biological variation than others, and thus it's easier to know what to expect out of mezcales made from them. We'll be looking at Agave marmorata,convalliscupreata, and rodacantha, a.k.a. tepextate, jabali, papalote, and mexicano respectively.

Throw in the massive number of region-specific naming quirks and things get even more murky. With some simple conventions and thinking about things in groups, you'll know your cuixe from bicuixe in no time.
